
Quinoa and Black Beans
1 tsp. vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth (or chicken broth)
1/4 tsp. cayenne pepper
Salt and pepper to taste
1 cup frozen corn kernels
1 (15oz) can black beans, rinsed and drained
1/2 cup chopped fresh cilantroHeat oil in medium sauce pan over medium heat. Stir in chopped onion and garlic, and sauté until lightly browned.
Mix quinoa into pan and cover with broth. Add cumin, cayenne pepper, and salt and pepper. Bring to a boil and cover on reduced heat for 20 minutes.
Stir frozen corn into pan and cook another 5 minutes. Mix in beans and cilantro.*For a simpler recipe, add salsa to quinoa instead of onions, garlic and spices.
