
Watermelon Salad
Dressing:
3 tablespoons olive oil
2 tablespoons fresh squeezed lime juice or lemon juice
small pinch salt
fresh ground white pepper to tasteSalad:
4 cups fresh spinach leaves, torn into bite sized pieces
1/2 cup fresh mint leaves, rough chopped plus extra for garnish
2 cups watermelon, deseeded and cut into 3/4 inch chunks
1/2 cup blueberries
1/2 cup strawberries, sliced
1/2 cup seedless cucumber, sliced
1/2 cup red onion, sliced very thin
1/2 feta cheese, crumbledWisk together dressing ingredients until combined. Set aside. Salad dressing can be made ahead of time and refrigerated until salad is being served.
Mix salad ingredients in large bowl. Toss with dressing. Garnish with additional mint if desired.
